Onion Loaf Recipe

My brother has been working away and as you do when working away he has been eating out. One night he posted a photo of his meal. I recognised what restaurant he was eating in from one thing on his plate. An onion loaf.

With the cost of living crisis getting harder and harder eating out is a luxury. However I begun thinking what if we could create meals as good as what we get when we eat out, at home. That surely would be a way to save money while living a good life.

With this thinking I started searching how to create this onion loaf at home and discovered this recipe which I adapted to our own way of cooking.

Onion loaf recipe

The following ingredients where required of which we used as much as we could from our own grown produce

  • 1 medium onion (from our allotment)
  • 2 cloves of garlic (from our allotment)
  • 1 tablespoon olive oil
  • 1 tablespoon flour

For the batter

  • 3 tablespoons of milk
  • 1 teaspoon sugar
  • 3 tablespoons flour
  • pepper and salt to season
  • flour for dusting
  • olive oil for cooking

Method

  1. I chopped the onion and garlic. Then put the oven on the hob with some garlic oil over a gentle heat. Added the onions and garlic to the pan and cooked gently until onions where soft. About 6 minutes with a low heat was best as we didn't want the onions to burn but just be nice and soft
  2. Once the onions was cooked I turned off the heat and added a tablespoon of flour to the onions and stirred them well to coat all the onions. This helped dry the onions for the batter to stick to the the onions better.
  3. I made the batter by mixing the milk, flour, sugar and seasoning in a bowl. Was the batter was well mixed I added the onions and again mixed well.
  4. I dusted a chopping board with flour, and took half the onion mixture and formed it into a loaf shape. Using the dusted flour board to hold the shape. I repeated with the remaining onion mix so we had 2 loaves.
  5. The original recipe (and I suspected the restaurants) use a deep fat fryer or frying pan with a lot of oil in it. We are trying to be healthy so we use our air fryer. I added a tablespoon of oil to the air fryer and turned it on to warm up before adding the loafs. After 5 minutes I turned the loaves so that they get cooked on all sides. I had to flip over the loves about 4 times in total to get them nicely cooked which led to about 25 mins of cooking time.
  6. Once nice and golden brown it was time to serve.

Verdict.

My wife and I really enjoyed this and will be making it again. It wasn't quite the same as a restaurant would make it but I am sure with practice we could certainly get it as good. The difficulty was in making the batter cook right through other wise we had some very floury tasting loaves.
