sweet potato with gremolata
Normally when i put a recipe up its one i take full credit for creating but like most recipes they are normally adapted from a similar recipe which is why i haven't put as many recipes online as I would of liked. so in order to overcome this I will now out my adapted recipes up with credit and links to the original.
This starts with today's recipe of which i got from this recipe from Tesco. As this week on the veg grower podcast seems to be sweet potato based it only seems fitting to include a recipe especially as this has been tonight's dinner for me.
Ingredients
6 small sweet potatoes (I used lots of small tubers which have been harvested this week for me)
75ml (3fl oz) extra virgin olive oil
3 tbsp chopped fresh parsley (still growing in the garden)
1 garlic clove, crushed (harvested earlier this year)
The zest of 1 lemon (I added the juice too)
1 red chilli, seeded and chopped (I've used green as I picked from the garden in order to create this meal)
150g (5oz) soured cream or yogurt
- pre heat oven to gas mark 6 or 200c or 180c for fan assisted.
- pierce sweet potatoes several times and place on a tray in the oven for 45 minutes just like a baked potato.
3.make the gremolata by combining the oil, parsley, garlic, lemon and chilli. - cut slits in the sweet potatoes and split apart.
- spoon over the gremolata the top with sour cream or yogurt and serve.
i really enjoyed this dish it has a very fresh, zingy taste and was just so tasty and enjoyable. I shall certainly be making this dish again.
This makes a great and tasty party food or a simple side to meal that tastes great and is healthy but best of all most of the ingredients came from the plot.
