Smoky Chard, Sweetcorn & Courgette Hash with Crispy Garlic Breadcrumbs

Mid‑August has brought some of the toughest growing conditions we’ve seen in years. The soil is baked, water beads on the surface instead of soaking in, and every plant seems to be crying out for a drink. But even in this heat, a few crops are powering on: chard, sweetcorn, and courgettes.

This week’s recipe celebrates those drought‑defying heroes with something a little different — a smoky, savoury summer hash topped with crispy garlic breadcrumbs. It’s bold, comforting, and packed with flavour, yet still light enough for warm evenings. And best of all, it uses crops that are thriving despite the weather.

A Quick Allotment Story

I’ve been spending a lot of time trying to coax water into hydrophobic soil lately — repeated light watering, damp cardboard, anything to get moisture to penetrate. But while some beds are struggling, the chard has stood tall, the sweetcorn is swelling nicely, and the courgettes… well, they never seem to stop.

After a morning of watering cans and cracked earth, I wanted something hearty but not heavy. This hash hit the spot: smoky veg, sweet pops of corn, and a crunchy topping that makes the whole dish sing.

Ingredients

For the Hash

  • 1 large handful chard (stems and leaves), chopped
  • 2 medium courgettes, diced
  • 2 fresh sweetcorn cobs
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt & pepper

For the Crispy Garlic Breadcrumbs

  • 1 slice stale bread, crumbled
  • 1 tbsp butter
  • 1 clove garlic, finely chopped
  • Pinch of salt

Optional Add‑Ins

  • A squeeze of lime
  • A handful of cherry tomatoes
  • A sprinkle of chilli flakes
  • A fried egg on top

Method

1. Char the Sweetcorn

Stand each cob upright and slice the kernels off. Dry‑fry them in a hot pan until they start to blister and pop — this adds gorgeous smoky sweetness.

2. Build the Base

Add olive oil, onion, and garlic to the pan. Cook for 5 minutes until soft.

3. Add the Courgettes & Chard Stems

Tip in the diced courgettes and chopped chard stems. Cook for 5–7 minutes until the courgettes soften.

4. Add the Chard Leaves & Paprika

Stir in the chard leaves and smoked paprika. Season well. Cook until the leaves wilt and everything comes together.

5. Make the Garlic Breadcrumbs

Melt the butter in a small pan. Add garlic and cook gently for 30 seconds. Stir in the breadcrumbs and salt. Fry until golden and crisp.

6. Finish

Scatter the crispy garlic breadcrumbs over the hash. Add lime, chilli flakes, or a fried egg if you fancy.

Serving Suggestions

  • Perfect as a main dish with a fried egg.
  • Lovely alongside grilled chicken or halloumi.
  • Works brilliantly as a warm salad with chickpeas.
  • Great spooned into wraps for an easy lunch.
