Air-fryer jalapeño cheese bites
This week’s recipe is jalapeño cheese bites, made with cream cheese, cheddar and mozzarella and cooked in the air fryer. The idea is a crisp breadcrumb shell around a soft, cheesy middle, with little pieces of jalapeño dotted through it. Three cheeses, five chillies and something a bit different for the kitchen.
Estimated yield: 12–16 small bites.
Preparation: about 20 minutes.
Chilling: 45–60 minutes, or until firm.
Air-fryer setting: approximately 180°C for 8–10 minutes per batch; begin checking at 6 minutes. These are starting estimates, not a tested cooking time.
Ingredients
- 100g cream cheese
- 100g cheddar, grated
- 100g mozzarella, grated — low-moisture mozzarella suggested for this draft
- 5 jalapeños, finely chopped, stalks removed
- 1 egg, beaten, for coating
- 50g plain flour, for coating
- Approximately 75–100g breadcrumbs, for coating — estimated quantity
- A little cooking oil to lightly brush the coating, optional addition
Method
- Wash and dry the jalapeños, then chop finely. Remove the pale inner ribs and seeds for a milder result. Wash hands thoroughly after handling chillies and avoid touching your eyes.
- Mix the cream cheese, grated cheddar, mozzarella and chopped jalapeños. Refrigerate for approximately 30 minutes, or until firm enough to shape.
- Shape into 12–16 evenly sized small bites. If the mixture is too soft to hold together, chill it for longer rather than adding the coating flour to the filling.
- Put the flour, beaten egg and breadcrumbs into three separate shallow bowls. Coat each bite lightly in flour, then egg, then breadcrumbs, pressing gently to cover any gaps. Some coating ingredients may be left over; discard anything that has contacted raw egg.
- Refrigerate the coated bites for a further 15–30 minutes, or until firm. Keep the remaining bites refrigerated while cooking each batch.
- Set the air fryer to 180°C and preheat if your model requires it. Lightly brush the bites with oil, if using. Arrange in a single layer with space between them. Try two bites first to check how the mixture holds together.
- Air-fry for approximately 8–10 minutes, checking from 6 minutes. Turn gently halfway through only if the coating is firm enough. The coating should be crisp and golden and the centre piping hot. Timing varies with bite size and air-fryer model; extend in short intervals if needed. For a thermometer check, the centre should reach 75°C for at least 30 seconds. Colour alone is not a reliable check that they are cooked through.
- Lift out carefully and allow to stand for a few minutes before eating: melted cheese can be very hot. Serve warm.
Testing and serving notes
If the test bites flatten or leak before the coating sets, chill the remaining bites for longer and check for gaps in the breadcrumb coating. Fresh mozzarella packed in liquid may make the mixture wetter, so drain and pat it thoroughly dry if that is what you use. Record the final yield, breadcrumbs used and successful cooking time before publishing. A suggested accompaniment is a tomato salsa or a cooling yoghurt dip.
