Recipe sweet potato and pepper soup.

It's been a while since I've written a recipe but tonight I created a sweet potato and pepper soup literally making it up as I went along but as I ate it I had to make a note of how I made it as it was very tasty and easy.

Ingredients:
Sweet potato (peeled and roughly chopped)
2 large peppers (descended and roughly chopped)
A small onion (peeled and roughly chopped)
2 plump garlic cloves (peeled and roughly chopped)
2 shallots (peeled and roughly chopped)
1 litre stock (I used chicken but vegetable would work too)
Salt and pepper to taste

Add the stock to a pan and get on the heat.
Add the sweet potato, peppers, onion, garlic and shallots to the stock.
Bring t the boil then reduce the heat to simmer until the sweet potato is tender and can easily push a knife into it.
Takeoff the heat and allow to slightly cool fr a few minutes and then blend to a soup consistency. (I used a stick blender but a jug blender will work just as well)
Reheat gently to a gentle simmer and add salt and pepper to your taste. About a pinch f each is all I needed.
Serve with some nice crusty bread.
