French onion soup recipe

With plenty of onions just been harvested, trying to find ways to use them can be tricky but this French onion soup recipe is a great answer.

Ingredients

  • 1tbsp olive oil
  • 50g butter
  • 1kg onions (from my allotment) Thinly sliced
  • 1tsp sugar
  • 2tbsp plain flour
  • 250ml red wine
  • 1.3l hot beef stock

Method

  1. Place and pan on a medium heat hob. Add the oil and butter and gently melt the butter
  2. Once the butter is melted , add the sliced onions. Place a lid on top of the pan and gently cook for 15 minutes.
  3. Add the sugar and cook for another 2 minutes. By now the onions should be very very soft and golden colour.
  4. Add the flour and stir to mix the flour well.
  5. Add the stock and red wine then gently simmer with the lid on for 20 minutes
  6. Serve with some crusty bread.

Verdict.

I really enjoyed this. I am quite fond of french onion soup at the best of times and this tasted delicious. It made enough for 4 people.

My wife however wasn't so keen but we have discovered she doesn't like wine in her food so next time I might omit the wine.
