Elder flower cordial.
I love elder flower cordial. Its one of those drinks that the smell just brings back summer. Its also such a refreshing drink that every year I make a batch of it to last all year.
To make elder flower cordial we need
- 1.5 litres of water
- 2.5kg sugar
- 2 lemons
- 20 elder flower heads
- 85g citric acid.
I find its best to harvest the flower heads in the morning. give them a shake to get rid of any bugs but no need to wash the flowers.
In a pan on the hob over a high heat dissolve the sugar into the water. Stirring to make sure all the sugar is dissolved. Once dissolved bring to a boil and turn the heat off.
slice the lemons and add to the pan with the elder flowers and citric acid. Place a lid over the top and leave to steep overnight.
The next day place a tea towel in a colander over a big bowl and bowl. I like to iron the tea towel first just to make sure its sanitised. Then pour the mixture from the pan.
We want to keep the liquid of which I tend to put some in a clean bottle to use straight away but I also freeze a good amount to have plenty throughout the rest of the year.
