Chicken, potato and green bean curry recipe
Its that time of year when green beans are plenty )amongst many other vegetables) from the allotment. Now I do like green beans but the standard why of slicing and boiling them can be a little boring, so I went in search of an interesting recipe to cook these and so doing so I discovered this chicken, potato and green bean recipe and thought I would give it a try.
As we are trying to keep our costs low most of our ingredients com from our garden. The chicken we bulk bought from a butcher and keep in our freezer till required. Onions, potatoes, green beans, passata all home grown ingredients and the curry paste is always in our cupboards.
Chicken potato and green bean curry
Ingredients
- 1 onion
- 6 chicken thighs chopped
- 6 small potatoes I used a variety called Maris bard which was dug up the same day as cooking. peeled and chopped up
- 2tbsp curry paste. I used a mild curry paste but hey whatever flavour you choose can work.
- 500g Passata this I always make plenty from my tomato harvests and keep in the freezer
- 200g green beans harvested from my allotment topped and tailed and then chopped into 1cm pieces approx
- 2tbsp of Greek yogurt
- Rice and naan to serve
Method
Firstly i placed a pan on a hob under a gentle heat and added some olive oil. Once the oil was warm enough I added the onions and chicken pieces and cooked gently for about 6 minutes.
Then I added the potato and curry paste and gave the whole mix a good stir before adding the passata. Stirred again, bought the heat up to a boil then reduced to a simmer. Left to cook for another 15 minutes.
I then added the green beans and once again mixed well before leaving the mix to simmer for 10 minutes. At this point I checked the chicken was thoroughly cooked and took off the heat. Added the yogurt and gave one final stir before serving with some rice and naan bread
Verdict
A curry is possibly my favorite meal when I lived on my own every Friday was curry night which is possibly why so many of my recipes are curries. Sitting down to this meal was a treat but also a surprise. The green beans really worked well in a curry and the potatoes I thought would need par boiling first, but in reality it worked very well as is.
As always when we cook, we tend to make a large batch so that we can add some to the freezer to eat another day. Whilst we did this we have almost finished the leftovers in less then a week as we couldn't resist having it for our dinner on other nights.
