Roasted Radishes with Whipped Feta – A Seasonal Spring Treat
Hi, it’s Scott here with this week’s recipe, and today we’re putting the spotlight on a slightly underrated star of the spring garden – the radish. While they’re lovely raw and peppery in salads, cooking radishes completely transforms them. Roasting brings out their softer, brassica-like characteristics, making them a seasonal treat in their own right.
This week’s recipe is Roasted Radishes with Whipped Feta, and let me tell you – the combination of hot, roasted radishes with cool, creamy whipped feta is hard to beat!
Roasted Radishes with Whipped Feta (Serves 2, or 4 as a side)
Ingredients:
- 600g radishes, cut in half
- 300g feta cheese
- 200g natural yoghurt
- 10g chives, chopped
- Juice of half a lime
- Olive oil
- Salt and pepper to taste
Method:
- Prepare the whipped feta: Add the feta, natural yoghurt, chopped chives, and lime juice to a food processor and blend until smooth. Alternatively, you can use a stick blender. Once blended, place the mixture in the fridge to chill for at least 1 hour.
- Roast the radishes: Preheat your oven to 180°C. Place the halved radishes on a baking tray, drizzle with olive oil, season with salt and pepper, and roast for 20 minutes until tender and slightly golden.
- Assemble the dish: Spread the chilled whipped feta over a serving plate, then top with the hot roasted radishes. Finish with a drizzle of olive oil for an extra touch of richness.
And that’s it – a simple, elegant spring dish that celebrates the humble radish in a whole new way.
