French onion soup recipe
With plenty of onions just been harvested, trying to find ways to use them can be tricky but this French onion soup recipe is a great answer.
Ingredients
- 1tbsp olive oil
 - 50g butter
 - 1kg onions (from my allotment) Thinly sliced
 - 1tsp sugar
 - 2tbsp plain flour
 - 250ml red wine
 - 1.3l hot beef stock
 
Method
- Place and pan on a medium heat hob. Add the oil and butter and gently melt the butter
 - Once the butter is melted , add the sliced onions. Place a lid on top of the pan and gently cook for 15 minutes.
 - Add the sugar and cook for another 2 minutes. By now the onions should be very very soft and golden colour.
 - Add the flour and stir to mix the flour well.
 - Add the stock and red wine then gently simmer with the lid on for 20 minutes
 - Serve with some crusty bread.
 
Verdict.
I really enjoyed this. I am quite fond of french onion soup at the best of times and this tasted delicious. It made enough for 4 people.
My wife however wasn't so keen but we have discovered she doesn't like wine in her food so next time I might omit the wine.
