We've also been busy potting up young plants, providing them with shade and extra care to ensure their survival in these challenging conditions. Additionally, we've joyfully harvested sweet and crisp peas, relishing the flavours of summer and celebrating the rewards of our hard work.

Potato Salad Recipe:

And now, let's tantalize your taste buds with a delightful potato salad recipe that perfectly captures the essence of summer. Here's what you'll need:

Ingredients:

  • 1 ½ pounds (680g) new potatoes, washed and halved
  • 1 small red onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Place the halved potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 10-15 minutes. Drain and let cool slightly.
  2. In a mixing bowl, combine the chopped red onion, parsley, and dill.
  3. In a separate bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
