Jersey Royal Potato Cakes.

The main reason we grow food is so we can eat it of course.

A member of the audience call Jen (check out her Youtube channel) has very kindly offered to help me out with a few recipes that she has written up and today she has shared this Jersey Royal Potato Cakes.

Jersey Royal Potato Cakes

I originally found this recipe on Delicious Magazines website while looking for something different to do with Jersey Royal potatoes, rather than boil then as I usually do. Don't get me wrong, I love a bowl of boiled Jerseys smothered in butter, but I fancied something different. 

They got a thumbs up all round especially from the fussy teenager.

All these fresh ingredient. Many of which can be harvested from our garden.

Ingredients.

800g Jersey Royals scraped of skin. 

150g of Smoked Cheddar Cheese, (you can use a vegan/Vegetarian alternative)

A knob of butter (again you can use an alternative)

2 tsp of mustard

Bunch of spring onions, trimmed and chopped

Seasoned plain flour

Oil

Method. 

Scrape and boil the potatoes in lightly salted water. Once cooked through drain and leave to one side so the excess water evaporates.

Mash or put the potatoes through a ricer, then mix in the cheese, mustard and butter until well mixed, stir through the spring onions and leave to cool for another 5 minutes. 

Shape into patties and dust with the seasoned flour.

Heat a good splash of oil in a non stick frying pan and fry the cakes on each side for  about 5 minutes or until golden brown, flip over with a palette knife or fish slice, once cooked through place on some kitchen roll to drain off any excess oil

These can be eaten hot or cold served with salad or just on their own as a snack.
