Chard, apple and bacon salad. 

This weeks recipe has been an adventure. I heard originally heard this on another podcast which I then attempted to recreate before finding this recipie from whole foods market.

3 slices bacon, diced (I used some smoked streaky bacon)

1 small yellow onion, halved and thinly sliced (I didn't use any onion but will next time)

1 Gala apple, cored and diced (I used an apple from stores)

1 bunch chard, well rinsed and slices (fresh out the garden)

1/4 teaspoon fine sea salt

1/4 teaspoon ground black pepper
Method

  1. I put a frying pan on the hob and placed the bacon in the pan and cooked.

  2. I removed the bacon and put to 1 side.

  3. The recipie I found says at this point add the onion to the pan with the fat from the bacon. I didn't do this but next time I will.

  4. I added the apple to the bacon fat and cooked for about a minute stirring all the time.

  5. I added the chard and cooked until just wilted.

  6. I placed the salad on a plate to serve, scattered the bacon over the top and seasoned.

  7. Serve.

 

I really enjoyed this dish as a side very tasty with the bacon tasting right the way through. I also like that this had no added fat as the bacon has enough in it.
